Corbieres Racine Ollieux Romanis, organic wine, a classic southern blend of 30% Roussanne, 30% Marsanne,20% Grenache Blanc, 20% Macabeu (Viura). These organic vines are between 10 and 35 years old and yield just 40 hectolitres per hectare, decent enough for the Languedoc but low enough to mean concentrated fruit and developed flavours in the wine. The vines are trained in the traditional goblet form and thrive in the complex soils of red clay, sandstone, puddingstone (Galets) and limestone pebbles. The fermentation takes place naturally and the wine is left to settle over the winter in tank on the fine lees before bottling in the Spring. The wine is sensationally good for one of this price point. It has freshness in abundance and exotic fruits and mineral notes of the front palate, but the finish is soft, warming, creamy and dreamy.
